The night we went, we also enjoyed a selection of cheese and cold cuts, delicious beef noodles, made to order Som tam, melt in the mouth short ribs, lobster bisque, lasagne, both salmon and beef carpaccio – and let’s not even mention the desserts!

I managed to have a few words with him between his carving of a very succulent leg of lamb and blow torching our servings of Wagyu nigiri! Born in Milan he began his culinary journey like all good Italians, in the kitchens of his mother and grandmother.
From there, having travelled extensively in his culinary career it was amazing for me to learn that he has only been in Thailand for three months. He already has a real understanding of the favourite Thai specialities such as mango and sticky rice and Khaw Larm. His personal favourite is Khao Soi, probably, he told me because the noodles remind him of his native pasta. Look out for this dish which he hopes to introduce to the buffet soon.
Surely Marcello’s adaptability must have been a key ingredient (sorry couldn’t resist the pun) in Marriott bringing him to Pattaya from The Ritz-Carlton, Grand Cayman, where he served as Chef de Cuisine in the Banquets division for 8 years. That together with his Italian roots, global culinary experience and obvious passion for high level cuisine make him an ideal choice to lead the team here.
For either casual or special occasions we really recommend the Weekend Dinner Buffet at Goji Kitchen Grill & Bar. Every Friday and Saturday it is a real treat!
