Setting Up Your Kitchen
Thai kitchens tend to be basic, using a double ring gas hob for cooking, and not much else. Western ones normally have a hob, oven and microwave: the latest microwaves combine oven and grill as well. So apart from this equipment what else do you need? Obviously a set of saucepans, and buying cheap is a false economy.
Meyers, who have a factory in Thailand produce the Analon & Circulon range of non-stick ware & the latest ones are dishwasher proof. They produce sets ready to use and have a factory outlet shop in Bangkok. If you do not want to travel to Bangkok, Central Festival have quite a lot of their range in stock. I also found their skillet and woks a good buy.
Now we have some of what we need, what about the preparation equipment? A food processor, a hand-held mixer, coffee grinder (for herbs & spices), different size whisks, kitchen knives (Meyers again), wooden spoons, spatulas, solid & slotted spoons, fish slice, ladles, sets of bowls etc. are basic requirements.
As you gain experience you will find other items or “gadgets” that can be useful. Some of the items that I found to be helpful were a garlic peeler (put the clove in it and roll it back and forwards and out comes a peeled clove….found mine in Tops in Central Festival), garlic press, ring-pull lever, tin opener, and a set of measuring spoons & cups. The one thing to remember…buy quality, it pays in the long run!! My prime example was a Fissler stock pot that I bought at John Lewis in the U.K. that is now 20 years old, gets a lot of use, and is as good as new. When I bought it, the cost was £90 (equivalent at that time to nearly 7,000 baht). My wife complains I cannot pass a kitchen shop or section in a department store without browsing.
